Technical tips for properly sizing your ventilation system for your commercial kitchen.

The most important factor for the proper operation of a restaurant range hood is the diameter of the kitchen exhaust duct!

Even with the most powerful motor in the world, if the duct is too small, you won’t get the results you’re looking for! You wouldn’t install a Citroën 2CV exhaust pipe on a Porsche 911… Well, kitchen ventilation works the same way! 

The maximum extraction capacity in your kitchen will be limited by the diameter of the galvanized pipe installed; the larger it is, the better the cooking fumes will be exhausted.

Here is a “theoretical” reference table for a restaurant range hood equipped with a dual-outlet centrifugal snail fan:

Galvanized pipe diameter = Maximum extraction capacity of the commercial range hood (for reference only)

160 = 800 m³/h (semi-professional hood for vacation rentals, private homes, reheating kitchens, etc.)
200 = 1,200 m³/h (~1–2 filters, 1 filter = 800 m³/h)
250 = 1,800 m³/h (~2–3 filters)
315 = 3,000 m³/h (~3–4 filters)
355 = 3,500 m³/h (~4–5 filters)
400 = 4,000 m³/h (~4–6 filters)
450 = 6,000 m³/h (~7–9 filters)

Be sure to install an air intake in the restaurant kitchen to compensate for the extraction from the commercial range hood; its cross-sectional area must be at least 70% of the extraction cross-sectional area!

Finally, to set up a restaurant ventilation system from your commercial range hood to the exterior outlet, you will need:

- agalvanized flat connector, galvanized collar, or flange (to connect the hood to the duct)
- agalvanized duct, galvanized tube, or galvanized conduit (rigid or flexible)
- a 45° or 90° galvanized elbow (to connect it to the galvanized flat spigot, add a galvanized female coupling)
- agalvanized male couplingbetween two galvanized ducts
- insulated suspension clamps every 2 m (+ 8 or 10 mm threaded rod )
- aluminum tape and fire-resistant sealant cartridge
- on the roof: galvanizedcapor 2-in-1 roof outlet cap (includes roof waterproofing; quick and aesthetically pleasing)
- on the facade: galvanized mesh pest-proof cap or galvanized mesh rain and pest guard(rain and pest-proof) or self-opening slatted facade shutter.
